And let’s be real—who doesn’t love a creamy, comforting pasta dish?! That’s exactly why I HAD to share this high-protein roasted red pepper pasta recipe with you.
This one is a total game-changer. It’s creamy, flavorful, and loaded with protein thanks to one key ingredient—cottage cheese! If you’ve never blended cottage cheese into a pasta sauce before, trust me, you’re missing out. It gives you that ultra-creamy texture without needing heavy cream or tons of added fat. Leangredients (Serves 2)
150g dry pasta
Ground beef (or protein of choice)
300g cottage cheese
300g roasted red peppers
200ml milk
1 tsp minced garlic
2 tbsp tomato paste
1 tsp smoked paprika
2 tsp parmesan (optional)
Leanstructions
1️⃣ Cook the pasta according to package instructions. Drain and set aside.
2️⃣ In a pan, cook the ground beef (or protein of choice) over medium heat until browned and fully cooked. Remove from heat and set aside.
3️⃣ In a blender, combine cottage cheese, roasted red peppers, milk, tomato paste, minced garlic, and smoked paprika. Blend until smooth and creamy.
4️⃣ Pour the sauce into a pan over low-medium heat. Stir in the cooked ground beef and let it simmer for a few minutes.
