1 English cucumber, diced
2 pints grape/cherry tomatoes, chopped in half
8 oz feta, diced
1/4 cup chopped parsley
1/4 cup olive oil
2 tbsp red wine vinegar
2 cloves garlic, minced
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper
Leanstructions
Prepare the cucumber: Slice the cucumbers crosswise into 4-inch long pieces. Cut each piece in half lengthwise. Place each piece of cucumber cut side-down on a work surface. Lay the blade of a chef's knife flat on top of the cucumber and lightly smash down using your fist or the palm of your hand. The skin will begin to crack, and the flesh will break down. Break or slice diagonally into bite-size pieces, and transfer to a large bowl.
Chop and prepare all remaining veggies, cheese, and herbs.
Add chopped tomatoes, diced feta, and chopped parsley to the bowl with the smashed cucumbers.
Pour on olive oil, vinegar, garlic, oregano, salt, and pepper.
Mix until everything is combined.
Serve! This will last in the fridge for up to 5 days.
