Cheesy Pull-Apart Pesto Cauliflower Recipe

CALLING ALL SQUADIES! We’ve got a new LEANMAZING recipe for you today. Say hello to Cheesy Pull-Apart Pesto Cauliflower! This lean recipe will satisfy all your cheesy needs while helping you stay on track with your lean goals!



This Cheesy Pull-Apart Pesto Cauliflower is a great lean side dish to any meal, or could even be a post-workout snack. Cauliflower is low in calories yet rich in fiber and contains high levels of Vitamin C, a powerful antioxidant that helps strengthen your immune system (so you can stay on the LEAN TRAIN – Choo Choo!). It also contains unique antioxidants which can help reduce inflammation and is high in water content. 

Another super beneficial thing about this recipe is that it can help you to be Metabolically Flexible due to the fact it is low in carbohydrates! Now, don’t get me wrong, I (and the 1,000’s of Squadies who do my meal plan) eat carbs BUT I also alternate between high carbohydrate meals and LOW carbohydrate meals. The reason I do this? Because it makes me metabolically flexible!!! 

What does that mean? 

Having metabolic flexibility is the ability of your body to burn your fat reserves as fuel. In short, it makes you a fat burning machine! This simply cannot happen if you eat carbohydrates with every single meal. Your body will consequently never be able to tap into your fat stores! 

By combining low-carb, high protein, and fiber meals we allow our bodies to fully deplete our glycogen stores and in the term, our bodies seek a new source of energy… OUR FAT!!

Every single meal plan I have ever made incorporates this principle and has in turn literally allowed 10,000’s of people to transform not just their bodies, but their energy levels and happiness!

Besides all the lean health benefits of this dish, it is also easily customizable! Not feeling the pesto? Swap it out for some marinara sauce and you’ve got yourself a lean pizza hack! Or to keep it simple, you could combine the mozzarella cheese with garlic butter to create a lean cheesy garlic bread hack. LEANGREDIENTS

  • 1 cauliflower (remove stem and leaves)
  • 1 tbsp olive oil 
  • salt & pepper 
  • ½ cup water 
  • 1 cup mozzarella 
  • 2 tbsp pesto 

LEANSTRUCTIONS

  1. Set oven to 425°F. Apply olive oil, salt and pepper all over the cauliflower head and place in a baking dish. Add water around the cauliflower and tightly wrap with tinfoil. Place in the oven for 40-50 minutes or until you can easily put a fork through the centre of the head. 
  2. Mix mozzarella and pesto and stuff the cauliflower after it has finished cooking and has cooled. Be sure to save a bit of the mixture for the top of the cauliflower.
  3. Broil for 3-5 minutes and then remove and let cool!


Notes: I used a knife and fork to remove the cauliflower bites!!
