Spinach and Feta Turkey Burger
One of my favourite lean refuels out there! Perfect for lunch or dinner after you’ve got that body burning, these Turkey burgers are an awesome way to replenish those glycogen stores and have your feeling satiated all day long!
LEAN-GREDIENTS:
- 1lb ground turkey
- 4 cups frozen spinach, thawed and excess water removed
- ¼ cup feta cheese*
- ¾ tsp salt
- ½ tsp pepper
- 1 clove of garlic, minced
- 1 egg
- 2 tsp lemon juice
- ½ tbsp olive oil
- 4 whole wheat thin buns**
Optional Toppings
- Lettuce
- Tomato
- Cucumber
- Tzatziki sauce***
*Use dairy free feta cheese for dairy free option
**Use gluten free thin buns for gluten free option
***Use dairy free tzatziki for dairy free option
LEAN-STRUCTIONS
- Place the turkey, spinach, feta cheese, salt, pepper, garlic, egg and lemon juice in a large bowl. Mix until well combined and shape into 4 patties.
- Heat the olive oil in a large pan over medium-high heat.
- Add the patties to the pan and cook for 5-6 minutes on each side or until cooked through.
- Serve immediately on whole wheat buns topped with lettuce, tomato, cucumber, and tzatziki sauce.
Low Carb Turkey Carbonara
I know pasta and “low carb”, typically don’t go hand in hand, but that all changes with Palmini Pasta. Trust me, these Turkey Carbonara is actually LEAN-SANE! This meal is also an AWESOME option for Lean Prep (meal prep) so you can cook it today and have meals for the rest of the week! Efficiency is key during the summer months!
LEAN-GREDIENTS:
- skinless, boneless, turkey breast
- 2 cans palmini pasta (hearts of palm)
- 10 strips of bacon, diced
- 1 pint nut milk (i used almond milk)
- 1 tsp olive oil
- 4 egg yolks
- 2 whole eggs
- ½ cup frozen peas
- 1 ½ cips ramona cheese (divided)
- Salt and pepper to taste
- ½ lemon
- 2 tbsp chopped parsley to garnish
LEAN-STRUCTIONS:
- Rinse and strain 1 can of Palmini pasta. After you have rinsed it, place in bowl and soak in a nut milk. I used almond milk. This helps eliminate any acidity in the Palmini pasta, as well as softening the noodles so they are incredibly leanlicious. Let noodles soak in milk for 20-30 minutes.
- While noodles are soaking, heat oven to 400 degrees Fahrenheit. Then prepare turkey breast by adding salt, pepper and a squeeze of lemon. Once ready, place on a baking try lined tin foil and olive oil. Place turkey breast on tray and put in oven for 30 minutes or until cooked through (165 degrees is we want the thermometer to read).
- In a large saucepan, cook chopped bacon over medium heat until crisp, about 3 to 5 minutes. Leave bacon and bacon fat in pan.
- In a mixing bowl, whisk together egg yolks, eggs, and 1 cup pecorino Romano cheese.
- Toss drained Palmini pasta with cooked bacon. Pour egg mixture in, along with a tablespoon of water and toss together with pasta 2 minutes on medium heat.
- Serve hot topped with remaining cheese, salt & ground pepper, and parsley to garnish.
Protein Pancakes
Ok, you might have seen me talk about these Protein Pancakes before, but I had to revisit them because they are simply SO tasty!This is our family’s go-to on a Weekend morning after an AM Lean workout! They are super tasty, super easy to make and really low sugar. They are truly the fluffiest pancakes you will ever try! You’ve GOT to try the Walden Farms Maple syrup .If you want to have a little fun with it, you can mix it up with the toppings!! If you like, you can choose to add any kind of berries or fruits to your pancakes, such as blueberries or strawberries. If you want to stick to the more salty and savory toppings, you can add some healthy nuts and seeds such as walnuts, pecans, sunflower seeds, or pumpkin seeds. Adding nuts will give you an extra dose of healthy fats and protein!
LEAN-GREDIENTS:
- 1 cup oats
- 1 banana
- 2 eggs
- ½ cup egg whites
- 1 scoop vanilla protein powder
- 2 tbsp flax meal
- 4 tsp baking powder
- Pinch of salt
- ¼ cup sugar free chocolate chips
- Waldens Sugar Free Maple Syrup
LEAN-STRUCTIONS:
- Place the rolled oats, banana, eggs, whey protein and baking powered into a blender and blend until smooth
- Over medium heat, use cooking spray or oil oil to coat a medium saucepan.
- Gently pour pancake mix into saucepan to desired pancake size
- Wait 1 minute, and place ¼ cup sugar free chocolate chips into top of pancake batter before flipping.
- Flip pancake and cook until golden brown.
- Remove from heat, plate pancakes and dress with Waldens Sugar Free Maple Syrup
