Healthy Protein Muffins Your Kids Will Actually Eat

From one parent to another, I know the blood, sweat and tears that go into finding healthy foods your kids will ACTUALLY eat and today I am here to help avoid some of that painstaking effort and share an amazing recipe Brodie and I love for the kids, and most importantly our kids love too… these healthy protein muffins!!

This healthy protein muffin recipe is honestly a game-changer because it’s filled with protein and natural ingredients. Unlike most store bought muffins that are filled with +50 to 60 grams of sugar these are a much healthier alternative. Ingredients like cottage cheese not only provide more protein, which all our kids could use, but also nutrients like vitamin D which is essential for our children!

Leangredients:

- 1/2 cup cottage cheese (I used 1% Nordica cottage cheese)

- 3 medium ripe bananas, mashed

- 1/2 cup creamy peanut butter

- 2 tablespoons melted coconut oil

- 1/4 cup pure maple syrup

- 2 eggs

- 1 tablespoon vanilla extract

- 1 1/2 cups whole wheat pastry flour (or all-purpose flour)

- 1 1/2 teaspoons baking soda

- 1/2 teaspoon kosher salt

- 1 cup semi-sweet or dark chocolate chips

- Peanut butter, for serving

Leanstructions:

1. Preheat the Oven: Preheat your oven to 350°F. Grease 16 muffin tins or line them with paper liners.

2. Add the Wet Ingredients: Add the cottage cheese, mashed bananas, peanut butter, coconut oil, maple syrup, eggs, and vanilla to the blender. Blend until the bananas are mostly pureed, leaving a few chunks for texture.

3. Incorporate the Dry Ingredients: Add the flour, baking soda, and salt to the blender. Blend until just combined. Be careful not to over-mix!

4. Fold in the Chocolate Chips: Use a spatula to fold in the chocolate chips.

5. Scoop the Batter: Divide the batter among the prepared muffin tins. I like to use an ice cream scoop for this. For an extra treat, add a few more chocolate chips on top of each muffin.

6. Bake: Bake for 20-22 minutes, until the muffins are just set. Serve them warm with a drizzle of peanut butter and a sprinkle of sea salt on top if desired. Trust me, that combo with the melty chocolate chips is beyond good!

Lean Tip:

Make a double batch and freeze some for later. These muffins freeze beautifully and can be a quick grab-and-go option on busy mornings.
