PUMPKIN ENERGY BALLS | LEANSQUAD

WHO’S READY for the EASIEST,  TASTIEST and of course, LEANNEST fall treat out there?! Pumpkin is definitely in season - and these balls have the perfect amount of pumpkin to keep your pumpkin spice tooth at bay! These energy balls will also help keep your sweet tooth at bay with natural & healthy sweeteners! Not only will they satisfy your cravings, but they will keep you SATIATED and feeling good! With 7 simple ingredients and 10 minutes, you can have these delicious pumpkin balls! 

What makes these balls sweet?! 2 of my favourite ingredients, almond butter and chocolate chips! Both these ingredients contain no added sweeteners and are sure to sweeten up any dish! The last sweetening ingredient is honey! Although honey does contain sugar, this sugar comes from a natural source! Honey also contains tons of antioxidants!

How will they keep you satiated and energized?! With the addition of healthy fats and proteins of course! We have protein coming from the almond butter, protein powder and flax meal! We have healthy fats also coming from the almond butter! Including healthy fats and proteins into your diet will give your body the proper fuel it needs to feel good and keep going strong all day long!

If you want to make these balls vegan friendly, no problem- you can simply swap out a couple of ingredients to make this possible! The honey can be swapped out for any other natural sweetener such as maple syrup or agave nectar. The last ingredient to swap out would be vanilla whey protein, which can be substituted for any vegan protein powder of your choice!

LEANGREDIENTS:

  • ¾ cup unsweetened almond butter
  • ½ cup pumpkin puree
  • 1 ¼  cups old-fashioned oats
  • ½  cup flax meal
  • 3 tablespoons honey
  • ½ cup sugar free chocolate chips 
  • ½ scoop vanilla whey 

LEANSTRUCTIONS:

  1. Place all ingredients into a large bowl, mix well 
  2. Using your hands, take small bits of the mix and roll it into bite sized balls. 
  3. Place rolled balls on a baking sheet lined with parchment paper
  4. Place tray in the freezer for 1-2 hours 
  5. Serve or store in freezer or fridge in an airtight container!
