Happy Wednesday Squadies! Before we LEAN in, I wanted to wish our Canadian Squad a happy belated Canada Day!

I am SO excited to be announcing my partnership with the Turkey Farmers of Canada!

I will be posting 4 LEANMAZING turkey recipes for all my Squadies to try! Each week, I will be focusing on a different body part, starting from full body using ground turkey! Following will be arms using turkey wings, chest using turkey breast, and legs using turkey legs! To kick things off this week, we are using LEAN GROUND TURKEY! I have made these abso-LEAN-ly leanlicious turkey meatloaf cups!

Why Turkey?

Turkey is such a GREAT source of lean protein! Just like chicken or beef, it is super versatile and easy to work with! It comes in different forms, and you can choose to work with light or dark meat, or a combination of both! Both the light and dark meat have their benefits. Dark meat is more nutrient dense, but has a higher fat content. The light meat contains less fat and overall calories. Turkey is packed with nutrients and minerals, such as vitamin B- 6, vitamin B-12, and zinc.

Another great reason to choose turkey is to change up your diet and keep things interesting! Having the same protein sources continuously can get boring and that’s not how we do it here at LEANSQUAD! Swapping out your basic protein source for turkey can help keep the body guessing, keep your lean meals interesting, and give you an opportunity to try something new and experience new flavours and recipes!

Protein is super important for us to have in our diets. Protein is essential in helping build and tone lean muscle! Without protein, your body is unable to build muscle! Adding turkey into your diet is another great way to make sure you are getting all the protein you need to stay healthy and grow some LEAN muscle!

MOIST TURKEY MEATLOAF MUFFINS!

WHO’S READY for these LEANLICOUS turkey meatloaf muffins?! Why are they so good?! First off, they are super moist! When eating meat, if it’s dry, it can be hard to enjoy what you are eating! You definitely won’t have that problem with these muffins! Using lean ground turkey mixed with veggies and eggs keeps the meat super moist, soft and leanlicious! These turkey muffins are also super versatile, you can customize them to be the perfect muffins for you! I chose to use bell peppers and jalapeños, but if you prefer a different veggie, such as carrots or celery, you can definitely add it or swap it out! If you are a spice addict, you can even add more fresh peppers, or choose a pepper that suits your spice needs.

I chose to use red bell peppers because of their leanmazing health benefits! One red bell pepper contains more than 200% of your daily vitamin C intake! They are good for your vision and contain lots of vitamin B-6, folate and antioxidants! You can choose to use green, orange or yellow bell peppers if you prefer, although they are not as vitamin and nutrient dense! Jalapeños are definitely a lean favourite ingredient! I LOVE my spice! Not only it is leanlicious, but eating spicy foods are beneficial for your health, especially when it’s coming from a fresh pepper! Spicy foods are beneficial for many reasons, the most common ones being speeding up the metabolism, which can aid in weight loss and can help with headaches and nasal congestion. Most of the nutrients and vitamins found in a pepper are in the skin and especially in the seeds! Keeping the seeds in will keep your dish spicier AND healthier!

My favourite thing about these turkey muffins is definitely how fast and easy they are to make. Since we are using a food processor, you can easily just give your veggies a quick chop and throw them into the food processor, letting it do most of the work for you! Just like many of my recipes, these turkey muffins are perfect for lean prep! Not only are they quick and easy to make, but they are easy to store and reheat! Pop a couple in the microwave for a minute or two and you have yourself a moist, nutrient packed lunch! AND you get some veggies in there too!

Here’s how to make it:

LEAN-GREDIENTS :

  • Half an onion (skin removed)

  • 1 Red Bell Pepper (de-seeded)

  • 1 jalapeno, stem removed (I left seeds in, for extra spice)

  • 1/2 cup rolled oats

  • 1 tsp ground cumin

  • 1 tsp paprika (add more if you want them spicy meatloaf muffins!)

  • 1 tsp dried oregano

  • Salt & Pepper to taste

  • 1 1/12 tsp yellow mustard

  • 2 tsp garlic powder

  • 454g ground lean turkey meat (1 pack)

  • 1 tbsp olive oil

  • 2 eggs

LEAN-STRUCTIONS:

1. Preheat the oven to 375 degrees.

2. Place onion, red pepper, jalapeño, in food processor and pulse several times until everything is in small pieces.

3. Now add the rolled oats, cumin, paprika, oregano, salt, pepper, mustard, garlic powder, turkey, olive oil and eggs. Process for 15-20 secs, or until mix is fully combined.

4. Scoop out mix into greesed, or non stick muffin tray. Scoop about 1/4 cup of mix into each muffin.

5. Bake the meatloaf muffins in the preheated oven for 30-35 minutes or until muffins are golden brown on top and cooked through.

6. Enjoy the tastiest, leanest and most moist turkey meatloaf muffins ever!!!
