LEAN STUFFED PEPPERS

Squadies, it might be ?snowing? outside, and the days might be short, but that DOES NOT mean we have to compromise our healthy and tasty MEALS!! I know the last thing you feel like doing after coming home from a long day is preparing an elaborate meal, so I have the PERFECT and most LEANMAZING solution –

?LEAN STUFFED PEPPERS!?

These peppers are so tasty and so easy to make??, they will IMMEDIATELY become a household favourite! They are also super versatile, so everyone you’re cooking for can have their choice of Lean Protein! I made them with Lean Ground Beef, but they can also be made with lean ground turkey, or lean ground chicken!! Feel free to mix and match if you really want a variety (Or if your dinner guests are demanding!??).

After you’ve picked your lean protein, mix in the spinach for a healthy dose of greens, some pine nuts for a little crunch, and some of the leanest spices (cayenne pepper, paprika, chilli powder, ground pepper, and cumin) for a little kick to ?FIRE UP? that metabolism keep your body burning all day long!?? To top it all off, a little melted cheese on top to seal all the flavour in! Talk about a well-rounded dish – Lean protein, veggies, spice and tons of flavour… Sound like something you’d be interested in???

The other lean (prep) tip is you can make these early, pop ‘em in the fridge, and they will be ready to go in the oven right when you get back from work. 20 mins later you’ve got a HEALTHY, LEAN, TASTY, and easy meal. Can you say, “Smart Lean Prepping?!”?

OK, so now that your mouth is watering, let’s see how we make ‘em.!!

LEAN-GREDIENTS (2 Servings):

  • 1/2 lb LEAN ground beef

  •  1 cup spinach

  • 1/2 tsp ground pepper

  •  1/4 tsp cayenne

  • 1 tsp paprika

  • 1/2 tsp chili powder

  • 1 tsp garlic

  • 1/2 tsp cumin

  • 5 whole peppers

  • 1 Tbsp crushed pine nuts

  • 1 cup Colby Jack Cheese

LEAN-STRUCTIONS:

  1. Preheat oven to 425 degrees.

  2. Cook the LEAN ground BEEF.

  3. While the LEAN ground BEEF is cooking, cut the peppers in halves and clean out the middle of each one.

  4. Set one pepper aside and finely chop it up.

  5. When the LEAN beef is almost finished cooking, add in the spinach and ground pepper.

  6. Add in the ground pepper, cayenne, paprika, chili powder, garlic, and cumin.

  7. Stuff each pepper half with the LEAN ground beef mixture and top with pine nuts.

  8. Bake for 15-18  minutes (or until peppers are nearly soft). Pull them out, add cheese and put back in the oven for 2-3 minutes.

  9. ENJOY!

**After you’re finished, place leftovers in Tupperware and store in the fridge for 2-3 days.
