GREEK STYLE CHICKEN LEAN PREP

Looking for a new recipe to spice up your meal prep routine? Then this Greek style chicken tray bake is perfect for you! This recipe is super easy to make - with simple ingredients and a prep time of only 10 minutes, it’s perfect for a meal prep day, or even as a quick meal you can throw together for the family after a busy day at work.


Not only is this meal simple and quick to make, but it is also lean-approved and packed with healthy lean-gredients! Red bell peppers are packed with antioxidants and vitamin C which help with the absorption of iron into the body. Yellow bell peppers also contain antioxidants and are high in potassium.


The addition of black olives and feta cheese will add a salty bite of flavour and a little twist for your tastebuds! As a lean meat, chicken breast can be a little dry on its own, so the addition of cherry tomatoes will add extra flavour and can balance out the dish. For all of the dairy free Squadies out there, by taking out the feta cheese, this dish suits all your needs!!  

Here’s how to make it:  

LEAN-GREDIENTS (4 SERVINGS):

  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 2 cups cherry tomatoes
  • 1 lemon
  • 2 large chicken breasts (in halves), or 4 chicken thighs
  • 2 cloves garlic crushed
  • 1/4 cup olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1/2 tsp smoked paprika
  • 1 tsp thyme
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp chopped fresh basil
  • 2/3 cup black olives
  • 1/4 cup chopped feta (optional)

LEAN-STRUCTIONS:

  1. Preheat oven to 400°F
  2. Cut red pepper and yellow pepper into 2 inch pieces, then cut the onion into ⅛ pieces
  3. In a large bowl, whisk together garlic, olive oil, vinegar, paprika and thyme.
  4. Place peppers, onions, tomatoes and lemon wedges on a large baking tray and pour ⅓  of the garlic mixture and salt and pepper over the veggies and lightly toss. THEN, place the chicken breast halves onto the baking tray and brush ⅓ of the mixture on them.
  5. Bake for 25 minutes, take out the tray and add the feta basil and olives and pour the remainder of the sauce onto the tray.
  6. Bake for another 5-10 minutes, or until chicken is completely cooked.
  7. Sprinkle with basil and it’s ready to serve!
