Cooking Konjac Noodles
When I first tried Konjac noodles, I followed the instructions on the packaging, which said to rinse them. Still, I have to admit it was not the most pleasant experience due to the smell, but that can easily go away through rinsing the noodles under cold water, moving them around a bit with your hand so that all the yucky water gets thoroughly rinsed off.
Transfer the noodles to a glass bowl. Add some acid to remove the unpleasant smell. I like to use lemon juice, apple cider vinegar, or white vinegar, which helps! I also recommend patting them dry removing all the excess water before adding them to your recipe!

Ginger Chicken Stirfry Recipe
Preparation time: 5 minutes | Cooking time: 10 minutes
Lean-gredients
- 1 ½ tbsp of soy sauce*
- ½ clove of garlic, minced
- 1 tbsp ginger, peeled and grated
- 1 tbsp coconut oil
- 5 oz chicken breast, sliced into cubes
- ½ yellow onion, chopped
- 2 celery stalks, chopped
- ½ red bell pepper, diced
- 1 cup broccoli, chopped into florets
- 2 cups kale leaves, chopped
- 2 cups konjac noodles (rinse in strainer with water and pat dry)**
*Use gluten free soy sauce for gluten free option** Can be substituted for regular noodles, which ads healthy carbs into your diet for a balanced meal.
Lean-structions
- Mix together soy sauce, garlic and ginger in a jar and shake well.
- Add coconut oil to a large frying pan and place over medium heat. Add chicken and yellow onion. Sauté for 8 to 10 minutes or until chicken is mostly cooked through.
- Add in celery, red pepper and broccoli. Sauté for another 5 minutes. Pour in sauce from jar. Stir well to mix. Once everything is well combined, turn off the heat and stir in your kale. Continue to stir until kale is wilted.
- Remove Konjac noodles from package and risen throughly with water and then pat dry to get out all of the excess water. Finally, add konjac noodles to veggies, mix well and cook for 2-3 more minutes (I personally like to leave them in the pan for an extra seer, that makes them taste even more delicious!!)
- Plate stir fry. Garnish with sesame seeds and hot sauce if you like and enjoy!
