WOOO Squadies! It’s SUPERBOWL SUNDAY and we are SO excited to share some of our favourite, LEAN recipes that you can take or make for your Superbowl Party which will be a GUARANTEED HIIT! Take the lead and make these SUPER tasty, SUPER easy recipes and lock up your spot as SuperBowl LIII LEAN VP!!
The 3 recipes we’ve got for you today are:

1. THE LEAN VEGAN NACHOS
Who doesn’t love to start their Superbowl Festivities off with a few hearty nachos? Instead of standard tortilla chips, make the swap and try some thinly sliced yams to make your nachos… go to LEAN-chos! One FULL sweet potato contains an average of 100 calories and are packed with nutrients such as Vitamin C, Vitamin B6, and potassium. Also, these sweet potato chips are baked in coconut oil, which is a much leaner choice than a deep fried tortilla chip!
For the meatless beef portion of the dish, you can use any brand of your choice! For my Bachelor viewing party (when I first made these Lean-chos) I used Gardein Meatless Meat mix. On the other hand, if you’re not a vegan or vegetarian and prefer to use regular meat, you can still keep this dish EXTRA lean by using LEAN ground beef, turkey or chicken!
This lean approved Vegan Beef Nacho dish is super flexible when it comes to substitutes to make it enjoyable for everyone! Check out the full recipe below, and if you want to cook along with me when I made them for my Bachelor viewing party, click the link HERE:
Here’s how to make it:
LEAN-GREDIENTS (6 SERVINGS):
- 2 medium tomatoes, diced
- 2 tbsp fresh cilantro, chopped
- 2 avocados
- 1-2 tbsp lime or lemon juice
- 2 tbsp green onions chopped
- 3 large sweet potatoes
- 4 tbsp melted coconut oil
- 2 tsp salt
- 1 medium yellow onion
- 1 lb of Gardein MEATLESS ground beef
- 2 cloves of garlic, minced
- 1 tsp smoked paprika
- ½ tsp ground cumin
- 1 tbsp tomato paste
- 12 oz. can diced tomatoes
- ½ a tsp of pepper
- Dairy free cheese, to taste
- 1 tbsp green onion, chopped
LEAN-STRUCTIONS:
- Preheat oven to 375℉
- Peel then slice sweet potatoes thinly, You can use a mandolin or sharp knife.
- Toss with 3 tbsp of coconut oil and 1 tsp of salt and pepper in large bowl.
- Line a baking sheet with parchment paper and place sweet potatoes in single layer.
- Bake for 10 minutes, flip then bake another 10 minutes, or until browned.
- While sweet potatoes are cooking, Melt 1 tsp of coconut oil in large skillet.
- Add garlic and onion, cook for about 2 minutes
- Add meatless ground beef, cook for 4-5 minutes, stir often to break it apart
- Add diced tomatoes, tomato paste, cumin, paprika, salt and pepper, stir until combined
- Take the meat off the heat
- In separate bowl, mash avocados then combine with lime or lemon juice, cilantro and diced tomatoes.
- Sprinkle dairy free cheese on top of sweet potato chips and bake just until cheese is melted, about 5 minutes
- To assemble, place sweet potatoes on the bottom of the plate, next add the beef mixture, then guacamole and to top it off, a sprinkle of green onion.
- Serve while hot!
2. LEAN CHICKEN FAJITAS SWEET POTATO SKINS
Chicken Fajitas x Potato skins… what’s not to like? Two of the tastiest dishes with an extra lean twist makes these a LOCK for your Superbowl party. Think, “Tom Brady to Gronk in the endzone” It’s a SURE THING!
Instead of a traditional potato, we use a half sweet potatoe to add a little touch of leanness to the dish! After hollowing out the sweet potatoes, we fill ‘em up with some lean protein (chicken), tasty veggies (red, yellow and green peppers), a little spice to keep the body burning, and we seal it all in with a sprinkle of mozzarella cheese. Sound appetizing?
Let’s see how we make ‘em:
LEAN-GREDIENTS (2 SERVINGS):
- 2 sweet potatoes
- ½ red bell pepper, sliced
- ½ yellow bell pepper, sliced
- ½ green bell pepper, sliced
- ½ onion, sliced
- 1 chicken breast
- 3 tablespoons mozzarella cheese
- Olive oil
FAJITA SEASONING:
- 2 teaspoons of chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic power
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoons paprika
LEAN-STRUCTIONS:
1. Pre-heat oven to 400 degrees
2. Using a fork, poke holes down one side of each sweet potato. Microwave for 5-8 minutes. (Let them cool before handling)
3. Cut the sweet potatoes in half and carve out centres, leaving small rim around the outside of each “boat”
4. Place sweet potato boats on baking sheet covered in parchment paper. Add the bell peppers and onion to the other side of the baking sheet. Drizzle olive oil
5. Mix the fajita seasoning ingredients together. Season the boats and veggies
6. Add chicken breast on top of the veggies. Drizzle in olive oil and add additional seasoning
7. Bake 20-25 mins, or until chicken reaches 165 degrees. Let cool for a few minutes
8. Shred chicken with two forks and mix together with veggies. Fill up sweet potato boats and top with mozzarella cheese
9. Bake for 5 more minutes, or until cheese is melted
10. Garnish with your favourite toppings (My favourite is guac!!)
11. BOOM — LEANNESS SERVED!
3. FLOURLESS BUFFALO CAULIFLOWER WINGS
Finally, what would a Superbowl be without some hot wings? Hot wings go hand in hand with football, but this year, we are putting a VEGAN, LEAN twist on a Superbowl staple.
ENTER FLOURLESS BUFFALO CAULIFLOWER WINGS!!
Forget the 3rd quarter food coma and stomach ache, these Flourless Buffalo Cauliflower wings are light, tasty and lean while still packing a punch! The apple cider vinegar is a natural phat burner while the hot sauce will have your mouth watering, and your taste buds happy!! LEAN-GREDIENTS (4 SERVINGS):
- 1 cauliflower head
- 2 tbsp butter melted
- 3/4 cup Frank's RedHot Buffalo Wing Sauce
- 1 tsp honey
- 1/2 tsp apple cider vinegar
- 1 tsp Tabasco Sauce
LEAN-STRUCTIONS:
- Preheat oven to 450.
- Cut up the head of the cauliflower.
- Mix together the remaining ingredients.
- Spray baking sheet with cooking spray.
- Toss cauliflower in sauce mixture.
- Oven roast for 20-25 minutes.
- Pull out and enjoy!
