A Berry-Lean Yogurt Bar!
If you are looking for a super quick and easy snack with a healthy dose of sweetness then you’ve come to the right place! This berry lean yogurt bar can be prepared in 10 MINUTES and can be stored in the freezer as a super quick and delicious snack or dessert! With few ingredients and a short prep time, you can easily prepare this dish as a meal prepped snack or can even be enjoyed as an “on the go” breakfast bar.
One of the BEST things about this dish is its versatility. For my particular berry lean Yogurt bar, I chose to us Strawberries and Blueberries for a variety of flavour and extra sweetness! However, if you’re not a Strawberry or Blueberry person, you can easily swap them out for whichever berry you like such as blackberries or raspberries. Similarly, if you want to ADD some berries for a berry overload, you can easily ADD ingredients along with the strawberries and blueberries already in this recipe. For the crunch factor, you can easily swap out the pecans for walnuts or even hazel nuts if you want a more savoury taste. Although this Berry Lean Yogurt bar can be used as a lean snack or an on the ground breakfast bar, it can also be used as a LEAN DESSERT! The sweetness and savoury nature of the bar will give you the satisfaction after a nice Lean Dinner and can replace a full on Whoopsie!! As I said above, this Berry-Lean Yogurt bar is extremely versatile and really, the possibilities are ENDLESS! Start with this recipe and have a little fun in the kitchen! Keep changing things up so that your meals are always interesting and different!
Finally, for all of our Vegan Squadies out there, don’t think we forgot about you! This Berry Lean Yogurt bar can be made into a Vegan Friendly dish by replacing the greek yogurt for a non-dairy based yogurt, such as coconut, soy or almond. Additionally, you can choose to replace the honey with either agave or maple syrup for a twist on sweetness! Oh, and if you’re looking for an extra dose of protein, try adding a few extra nuts on top — don’t be shy, it tastes LEANMAZING!!

Here’s how to make it:
LEAN-GREDIENTS :

2 cups plain greek yogurt
-
¼ cup honey
-
½ tsp vanilla extract
-
¼ tsp fresh lemon juice
-
Pinch of salt
-
Strawberries (to liking)
-
Blueberries (to liking)
-
pecans (to liking)
LEAN-STRUCTIONS:
- In a large bowl, mix together yogurt, honey, vanilla, lemon juice and salt. Mix until completely combined.

Transfer mixture onto a lined baking sheet, spread evenly.

Thinly slice strawberries and blueberries.

Add berries onto baking sheet, spread out as desired.

Chop or crush up pecans, sprinkle onto sheet as desired.

Place baking tray in the freezer until solid (about 2-3 hours)

Cut into squares, store in freezer or serve!
