Sweet Lean-Tato (Sweet Potato) Toast
One of our favourite breakfast staples, toast, is getting a big LEAN upgrade.
Say HELLO to sweet potato (LEAN-TATO) toast!
Not only are sweet potatoes comforting and delicious (especially in fall/winter), but sweet potatoes are LOADED with vitamins and minerals, they are a rich source of fibre (promotes healthy digestion) and they are high in antioxidants -- specifically in beta-carotene (converted to Vitamin A in the body, supports the immune system, and is essential for healthy vision).
For Vegans, this is a no brainer! For non-Vegans, you’ll get the same enjoyment!!
Naturally gluten free, sweet potato toast is super easy to make, satisfies your “toast” cravings (with a higher nutritional value) and can be enjoyed savoury or sweet.
P.S. THIS IS AN AMAZING MEAL PREP. YOU LITERALLY FOLLOW THE INSTRUCTIONS BELOW, PLACE THE REMAINDER OF YOUR SWEET POTATO PIECES IN THE FRIDGE, AND WHENEVER IT’S TIME FOR YOUR LEAN REFUEL, YOU PULL THEM OUT, THROW THEM IN THE TOASTER AND TOP WITH YOUR FAVOURITE LEAN-GREDIENTS (INGREDIENTS).
The three ways we like to top our sweet lean-tato toast are:
1. Mashed Avocado + Red Pepper Flakes
2. Peanut Butter + Banana + Flaxseed
3. Almond butter + Blueberries + Cinnamon (this is my personal favourite)
Packed with nutrients, this meal is a lean-mazing post workout lean re-fuel (when carbohydrate stores are low), replenishing your body with healthy carbs, fats and lean protein. It takes ONLY 15 minutes to make and can be prepared in the oven or toaster. Here’s how we do it…
LEANCIPE (SWEET POTATO TOAST):
LEAN-GREDIENTS (1 SERVING)
1 large sweet potato (¼ inch slices)
Your choice of toppings:
Almond butter + Blueberries + Cinnamon
Peanut Butter + Banana + Flaxseed
Mashed Avocado + Red Pepper Flakes
Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Trim the pointy ends off the sweet potato then lay it on its side on a cutting board. Slice it lengthwise into 1/4 inch slices.
Throw your sweet potato slices onto the baking tray and drizzle a very small amount of olive oil and rub into pieces.
Bake until the slices are tender and you can easily pierce with a fork. I cooked them for a total of 20 minutes, flipping the sweet potato pieces after 10 minutes.
Let your sweet potato slices cool after the oven. If you want some to eat immediately, throw them into the toaster. Otherwise, store your sweet potato pieces in an airtight container and place in the fridge. When you’re ready for some Lean-tato toast, all you have to do is remove from fridge and throw them into the toaster.
Toasting & topping instructions:
Pop the sweet potato slices into the toaster. You may need to toast a double time depending on your toaster.
If you do not have a toaster, set your oven to broil and bake on a sheet for 3 - 6 minutes per side. Place toasted sweet potato on a plate and top with any of the above topping options and enjoy!
