AM Lean Refuels are the best!

Mornings can be a hectic time of day, making it challenging to get creative around what to eat for breakfast. Typically, I try to get my fasted workout in, and then I am hungry for a tasty breakfast, but sometimes thinking of something creative is difficult and we often opt for the same meal every morning which can get a little boring. So, I’m always looking for quick and easy breakfast recipes to make in a pinch (so I can get back to my day!) and taste lean-mazing of course.

Especially if you get your fasted HIIT workout in the morning, breakfast is an SUPER tasty and important re-fuel before you take on the day. It’s important to make sure you’re giving your body the right kind of fuel to keep you going until your next meal. These breakfast stuffed sweet potatoes will do just that! A twist on the standard bacon and egg breakfast, this recipe is loaded with complex carbs, protein and fats to keep you fueled, ESPECIALLY after crushing that workout in the AM. This will also ensure blood sugar levels are stable, so you won’t crash mid-morning… and be tempted to go for some not so lean options throughout the day. They are super simple to make, take less than 10 minutes (if cooked in the microwave) and you only need a handful of ingredients. 

I made them with eggs, turkey bacon and cheese but you can add in any veggies or meat you like. 

Here's how to make them:

  • 1 sweet potato

  • 4 eggs 

  • 2 slices turkey bacon

  • ¼ cup low-fat cheese

  • Salt and pepper, to taste


  1. Wash the sweet potato and pierce it with a fork. Wrap it in a damp paper towel and microwave for 5 minutes or until tender, flipping it over halfway through. 

  2. While the sweet potato is cooking, fry the turkey bacon in a pan until crisp. Remove, crumble, and set aside. 

  3. Scramble the eggs, add salt and pepper to taste, and cook them in the pan until just cooked. 

  4. When the sweet potato is cool enough to handle, cut it in half and scoop out about half the potato for each half. Reserve for later use. 

  5. Fill each potato half with eggs, bacon, and cheese. Microwave for 30 seconds more until the cheese is melted and enjoy!

  6. For the oven- bake the sweet potatoes at 400 degrees F for 45 minutes. Follow the same steps, then broil for just a few minutes to melt the cheese
