SPICY LEAN CHICKEN PATTIES
Who doesn’t love a juicy burger? If you know me, you know they’re one of my favourites and these spicy chicken patties don’t fail to impress. Just because it’s not “grilling season” does not mean I won’t add these to my weekly meal rotation. Made with only a few ingredients (lean ground chicken, zucchini and some spices) they are packed full of flavour with a little kick from the cayenne pepper to the get the body burning. What’s even better, they are gluten and dairy free. No bread, flour, or egg is needed to make these patties taste LEANMAZING. The grated zucchini helps to bind the ground chicken together and keeps the burgers super moist and tasty.
These patties are a great way to get your burger fix, without falling off the lean wagon. They are super lean and packed full of protein to keep hunger at bay. High protein foods also increase your metabolic rate and they are rich in B vitamins which help your body metabolize food for energy, so you can keep up with your workouts!
This recipe is super versatile and can be used as a lean meal or refuel (Depending on a bun or sides). I like to enjoy mine in lettuce cups with my favourite burger toppings, or if I’m eating them post workout, I’ll have them with a whole-grain carb like sweet potatoes or yams.
Here’s how to make them:
LEAN-GREDIENTS (4 Servings)
1 lb lean ground chicken
1 medium zucchini, grated and squeezed well of excess moisture
1 garlic clove, minced
¾ tsp kosher salt
½ tsp black pepper
¼ tsp onion powder
¼ tsp cayenne pepper
1 ½ tbsp canola or coconut oil
Combine all ingredients (except oil) and stir until just combined. The mixture will be wet.
Form into small patties, about 1 ½ inches wide, and place on a plate. It should take about ¼ cup of the mixture for each patty.
Heat oil in a large skillet over medium-high heat. Add patties and cook over medium-high heat for 5-6 minutes then flip and finish cooking another 4-5 minutes. Cook for 5-6 minutes, then flip and finish cooking, another 5-6 minutes, and cook for 5-6 minutes.
Add patties, and cook over medium-high heat for 5-6 minutes, then flip and finish cooking, another 5-6 minutes, then flip and finish cooking, another 4-5 minutes, until chicken is cooked through. Add extra oil or turn down heat if they are cooking too quickly or if you are doing more than 1 batch.
