RED PEPPER NACHOS WITH A
One of my favourite guilty pleasures is a big plate of nachos with all the fixings. With all the sporting events to watch (hockey, football, baseball, soccer) and Fall TV shows in full swing, the temptation to snack on “Not-so-lean” options can be real…. especially a big plate of nachos. Although a Whoopsie every once in a while is OK, too much unhealthy snacking is NOT a lean habit!
INSTEAD of giving up nachos altogether, I found a lean way to recreate the classic nacho dish!!
These red pepper lean-chos are guaranteed to satisfy your nacho cravings, while still keeping the leanness going. The bell peppers give the dish plenty of crunch, so you won’t even miss the tortilla chips, and you can still enjoy all your favourite toppings… this is a LEAN WIN!
I like to enjoy mine topped with lean ground turkey (makes them super hearty), shredded cheese, salsa and guacamole. With the bell pepper, ground turkey and guacamole, you are getting a snack full of protein and healthy fats! This combination will keep you quench your snacking appetite AND make sure that you’re satisfied!
The BEST part about this dish is that it is VERY versatile, so you can add whatever toppings you desire! If you’re vegetarian or don’t eat red meat you can substitute the ground turkey for black beans, or ground beef. You could also add some Greek yogurt or crema, pickled red onions, olives, jalapenos and pickled radishes or extra cilantro
Here’s how to make these lean-mazing nachos:
1 lb lean ground turkey (or beef/chicken)
3 bell peppers, sliced (into chip sizes)
1 cup onion, chopped
¼ cup salsa
½ cup cherry tomatoes
½ cup shredded cheese
2 tbsp green onion
2 tbsp cilantro
1 tbsp olive oil
1 tbsp red wine vinegar
Preheat oven to 350 degrees F.
In a bowl, add ¼ cup onion, cherry tomatoes, green onion, cilantro, red wine vinegar and salt and pepper to taste, then set aside.
In another bowl, add avocado and mash with a fork. Add in ¼ cup onion, and lime juice, then set aside.
Heat 1 tbsp of olive oil in a skillet or medium-high heat, then add onion and sauté for about 5 minutes, until onion is translucent, then add the ground turkey (or meat of choice).
Using a spatula, break up the beef in the pan. Cook for about 8-10 minutes, until it is no longer pink. Stir in the salsa and let simmer for 5 minutes.
Lay out bell pepper slices and place in oven for about 5 minutes.
Take out of the oven then cover with meat mixture. Add cheese and top and any other toppings you want heated.
Place back in the oven and cook for 10 minutes until cheese has melted.
Take out of the oven and top with your favourite topping.
