Low Carb Burrito Bowl

I’m a big fan of burrito bowls, so I love trying different variations of this classic Mexican dish.  This Spicy Shrimp Burrito Bowl is so lean-mazing that I make it AT LEAST once a week as a lean quick recipe for lunch or dinner.  Generally, I like to use cauliflower rice as the base for the bowl, and then I top it with loads of fresh ingredients and lean protein. The “Cilantro-Lime” cauliflower rice really amps up the flavours and makes this dish super fresh and light. 

Although burrito bowls can be topped with a number of items, I used shrimp in this recipe because it’s an excellent source of protein (there is a WHOPPING 24 grams of protein in 100 grams of shrimp) which is key for building muscle and very low in fat.  Oh ya… and they also take just MINUTES to cook. In addition to all the benefits of shrimp, the avocado corn salsa adds lots of flavour to the dish and is loaded with healthy fat and fiber – This is a LEAN WIN!

This dish is super versatile, so you can “add in” or “sub out” any ingredients based on dietary restrictions or personal preferences. For example, if you want to include beans, or swap out the shrimp for (lean) ground turkey or (lean) beef – go right ahead! 

Some additional toppings to use are fresh cilantro, shredded cheese, sour cream (not too much!!) or hot sauce…. The lean possibilities are endless!

Here’s how to make it:

  • 2 ½ tsp chili powder

  • 2 ½ tsp cumin 

  • ½ tsp garlic powder

  • ½ tsp cayenne pepper 

  • 1 ½ pounds raw shrimp, deveined & shelled

  • 1 package cauliflower rice, thawed 

  • 1 tbsp olive oil 


  • 2 cups corn

  • ½ red onion, diced

  • 1 can black beans, drained and rinsed 

  • 1 cup tomatoes, diced

  • 1 lime, juiced 

  • ½ tsp garlic powder 


  • 4 cups cauliflower rice

  • 2 limes, juiced 

  • ⅓ cup cilantro, chopped

  • ½ tsp salt

  1. Cook the cauliflower rice according to the package directions. 

  2. Once cauliflower rice is done, mix in the lime juice, cilantro, and salt, then set aside. 

  3. In a medium bowl, mix the corn, black beans, red onion, tomatoes, lime juice and garlic powder. 

  4. Heat olive oil in a skillet over medium-high heat, add the shrimp and sprinkle the spice mixture over top and stir.

  5. Cook the shrimp for about 3-5 minutes until cooked through, then remove from heat. 

  6. To assemble the bowl, layer cauliflower rice, corn salsa, and shrimp. Top with the items of your choice!!

  7. Enjoy!
