3 RECIPES TO MAKE THE LONG WEEKEND EXTRA LEANMAZING

The long weekend is finally here and this is definitely a time that you want to enjoy every minute of every day. Now, instead of fuelling your body with sugary, processed foods, try incorporating some yummy, healthy and EASY recipes into your long weekend. That way, you will feel energized and happy throughout the weekend. Try these recipes and I promise, you will be smiling all weekend long!

Lean Long Weekend Breakfast Popsicles

These breakfast popsicles (also known as lean-sicles) are so yummy and especially good after a morning workout on a hot summers day. Whip these up before you go to bed and you will have some super easy and yummy leanness ready to go every morning this long weekend!

Leangredients (ingredients):

  • 1 cup greek yogurt
  • 1/2 cup almond milk
  • A couple squirts (teaspoons) of honey
  • 1/2 cup granola
  • 1 cup chopped up fruit (I used raspberries and blackberries)

Leanstructions (Instructions):

  1. Throw the greek yogurt, almond milk, and honey in a bowl and mix together (lean remix). 
  2. Pour the lean mixture into your popsicle molds. As you pour the mix into the molds, add the berries sporadically, that way you will enjoy them throughout the entire popsicle! 
  3. At the end of the popsicle, add the granola to each one. 
  4. Place a popsicle stick in each mould and place in freezer for 3-5hrs before eating (when defrosting, run under a little warm water to loosen popsicle from mould). 
  5. Enjoy your lean popsicle!

Pan Seared Salmon with Avocado and Tomato Salsa

Lean warning: this pan seared salmon is SO leanmazing. This is a super lean and tasty meal full of healthy fats that will keep you energized all day long. Oh and did I mention it tastes leanmazing?!!

Leangredients (ingredients): 

  • 1lb salmon fillets
  • 3 tablespoons lemon juice 
  • 2 tablespoon olive oil
  • salt and pepper to taste

Salsa:

  • 3 tomatoes finely chopped
  • 2 tablespoons red onion, finely chopped
  • squirt of lime juice
  • 1/2 jalapeno, finely chopped  
  • salt and pepper to taste
  • 1 avocado (sliced)

Leanstructions (Instructions):

  1. Pat the salmon dry with some paper towel. Then cut salmon into equal pieces. 
  2. Season salmon pieces with salt and pepper and lime juice over each fillet. Rub in! 
  3. Then, add olive oil to pan on medium-high heat and add salmon fillets, flesh side down. Sear for 3-4 minutes (or until crispy golden). 
  4. Then flip the salmon fillets and cook for a further 1-2 minutes, or until salmon is cooked through to desire. 
  5. While salmon is cooking, add all the salsa ingredients (except the sliced avocado) into a bowl and do the lean remix (mix together). 
  6. Once salmon is cooked, top with sliced avocado and salsa. 
  7. The final step is to enjoy your leanmazing meal!!

Fried Egg & Lean-cchini (zucchini) Noodles with Pesto

Everyone loves an easy breakfast and this pesto zucchini noodles and fried egg is no exception. It is so simple yet super flavourful. Again, this is a lean meal that everyone will enjoy!

  • 1 pack of zucchini noodles
  • 2 cups packed basil leaves
  • 2 cloves of garlic
  • 1/3 cup olive oil
  • 2 teaspoons fresh lemon juice
  • 1/4 cup parmesan cheese
  • dash of pine nuts
  • cherry tomatoes
  • 1 egg
  • salt and pepper to taste
