SUMMER PEACH SALSA & BBQ CHICKEN (with a kick)

OH MY LEANNESS! THIS PEACH SALSA (WITH A DASH OF JALAPENO) WAS SOOOOOO GOOD AND SO FLAVOURFUL. ALL YOU NEED IS A FEW LEANGREDIENTS AND YOU WILL BE OFF TO LEAN PARADISE THIS SUMMER.

LEAN-GREDIENTS:

  • 4-6 CHICKEN BREASTS (CAN SWAP FOR FISH IF PREFER)
  • 1 CUP PEACHES (DICED)
  • 1 CUP TOMATOES (DICED)
  • 4 TABLESPOONS JALAPENO (FINELY DICED, SEEDED)
  • 2 TABLESPOONS RED ONION (DICED)
  • 3 TABLESPOONS CHOPPED CILANTRO
  • 1/2 TABLESPOON LIME JUICE
  • DASH OF CHILI POWDER

LEANSTRUCTIONS:

  • FOR SALSA, COMBINE THE DICED PEACHES, TOMATOES, JALAPENO, ONION, CILANTRO AND LIME JUICE, AND A DASH OF CHILI POWDER IN A SMALL BOWL. THEN MIX TOGETHER (DO THE LEAN REMIX). 
  • FOR BBQ, PREHEAT GRILL TO MEDIUM / HIGH HEAT. ADD OIL TO GRATES AND THEN ADD CHICKEN BREASTS. DEPENDING ON HEAT, FLIP AT 6-8 MINUTES. 
  • SERVE THE LEANMAZING SALSA OVER THE CHICKEN AND ENJOY YOUR DINNER!
