spicy cajun chicken & baked sweet potato - Lean Prep!!!

One of my favourite ways to ensure I stay lean all year round is by planning ahead and meal prepping. Preparing your meals in advance is a sure fire way to set yourself up for success and feel lean-mazing! 

Try this spicy cajun chicken and baked sweet potato is the perfect, post workout lean prep. It is super easy to make and tastes leaniclious!

 

SPICY CAJUN CHICKEN AND BAKED SWEET POTATO LEAN-GREDIENTS (4-6 SERVINGS)
2 lbs chicken breast, boneless, skinless, cut into cubes
3 tbsp cajun seasoning
2 tbsp olive oil
3 sweet potatoes, peeled and diced
8 cups broccoli florets (lean treez)
Sea salt & pepper to taste
½ lemon, juiced
3 avocados, diced  

LEAN-STRUCTIONS:
Preheat oven to 425 degrees F. 
In a mixing bowl, marinate chicken with ½ olive oil and cajun seasoning. 
On separate baking sheets, arrange the broccoli (lean treez) and sweet potato and drizzle with olive oil. 
Arrange the chicken on a separate sheet pan.
Bake all the lean-gredients for 12-15 minutes then remove broccoli and chicken. 
Stir sweet potatoes and roast for another 15 minutes. 
Plate chicken, broccoli, and sweet potato in a bowl. 
Top with diced avocado, drizzle with lemon juice and enjoy!Notes:Store remaining in the fridge for 2-3 days.
