LEANMAZING Low Carb Noodle Stir Fry

I hope everyone had a LEANMAZING weekend and are ready to CRUSH the lean week! We are coming into Spring which means sunshine & a whole lot more OUTDOOR LEANNESS! In the kitchen, we still want to keep it quick, easy and tasty, while making sure we eat lean so we are looking our BEST for the Summer!

With that said, one of my FAVOURITE style of meals to make is a Stir Fry! Today, we are going to make the LEANNEST and tastiest, LEANMAZING LOW CARB Noodle Stir Fry! Who else LOVES stir fry noodles, but doesn’t love all the carbs that usually come along with it?! Look no further! I have a recipe PERFECT to satisfy all your stir fry noodle cravings without overloading on carbs!

This LOW CARB Teriyaki Shrimp Noodle Stir Fry serves 4 and takes only 25 minutes to cook and prepare! Perfect for a quick dinner for the family or you can even use this recipe as part of your meal prep! Combining ginger, green onion, peanuts and teriyaki sauce, this stir fry is SUPER flavourful and delicious!

This dish is perfect for all of you Squadies out there who enjoy hearty meals! What makes this dish unique is the use of Konjac noodles. These noodles are made from water and glucomannan, a fiber extracted from the root of a Konjac plant. The end result is a noodle made up of approximetely 97% water and 3% glucomannan, which makes these noodles very low in carbs. Glucomannan also contains TONS of fibre and has many health benefits. Due to its high water and fibre content, when eaten, konjac noodles take longer to digest, which gives your body more time to absorb the nutrients in the food you just ate. The slow digestion also helps you feel full for longer, therefore can help you lose weight! Konjac plants are mainly grown in Japan and China, and are used in many traditional Japanese dishes.

Here’s how to make it:

LEAN-GREDIENTS (4 Servings):

  • 1 lb fresh or frozen shrimp

  • 12 green onions

  • 1 tbsp toasted sesame oil

  • 1 tbsp fresh ginger, grated

  • 2 cups snap peas, trimmed

  • 1 pack Konjac noodles

  • 1 cup pineapple, chopped

  • 3 tbsp teriyaki sauce

  • 3 tbsp water

  • ¼ cup dry-roasted peanuts, chopped


  • Chop green onions, separating the dark green tops from the light green/ white bottom.
  • In a wok or pan, add ginger into pan heated at medium heat, cook for 30 seconds. Add light green and white part of the green onions, and snap peas. Cook for about 2 minutes

  • Add deveined and cleaned shrimp, noodles, and pineapple, cook until shrimp is opaque

  • Add teriyaki sauce and water, stir.

  • Top with chopped peanuts and tops of the green onions.

  • Serve!
