CAULIFLOWER GNOCCHI with Pesto Chicken Sausage and Asparagus!

For those of you who follow along on Instagram, you know that I have been in U.S. for the past couple of weeks! One of my FAVOURITE places (well I have a lot of favourite places, hehe) to go when I go to the United States is Trader Joes! Trader Joes has some of the most LEANMAZING options to cook some super Yummy dishes that are also super LEAN! One of their BEST ones yet is CAULIFLOWER GNOCCHI!!
Are you the type of person who loves a pasta dish, but don’t feel super leanmazing afterwards? Well that’s exactly how I feel, and I have the perfect lean solution for you! This lean-licous Cauliflower Gnocchi is perfect to cure all your pasta cravings and leave you feeling full while staying lean!
Gnocchi is usually a super heavy pasta since it is made with potatoes, so although gnocchi is delicious, sometimes it can leave you feeling bloated and heavy. Since the gnocchi used in this recipe is made with cauliflower rather than potatoes, you can still enjoy your gnocchi without the negative carb effects! What’s even better (like most homemade pasta dishes) is that you can add a TON of different toppings to make this Cauliflower Gnocchi dish super versatile!!
In this particular dish, I used asparagus, sun-dried tomatoes and pesto to make the perfect LEAN EXPLOSION of flavour! BUT, for all the Vegetarian and Vegan Squadies out there, you can easily switch out the chicken sausage with a Vegan sausage or you can opt out of the sausage all together by adding extra veggies. Some great veggie add ons include broccoli or spinach.
This recipe is super quick and easy to make! With a prep and cook time of 30 minutes or less, this meal is perfect for a quick lean dinner after work. You can also easily lean prep this meal and enjoy it as a flavourful work lunch!
Unfortunately, we don’t have Cauliflower Gnocchi in Canada yet (unless someone knows different — LET ME KNOW!) But make sure to visit Trader Joes the next time you are in the U.S.!
Here’s how to make it:
1 bag Trader Joe's Cauliflower Gnocchi
1 bunch asparagus
2 chicken sausages
1/3 cup sun-dried tomatoes
1/2 cup basil pesto
salt and pepper to taste
Preheat oven to 400℉
Cut asparagus into 1 inch pieces, toss with olive oil and salt
Spread onto baking sheet, roast for 20 minutes in oven
Cut sausage into bite sized pieces
Heat olive oil in pan, cook sausage until crispy
Set sausage aside, add more olive oil to the pan and cook cauliflower gnocchi for 8 minutes, or until golden brown. Stir continuously.
Add asparagus, sausage, and sun-dried tomatoes to pan
Add pesto into pan, toss until everything is evenly coated
